Hello Moms! I am so glad to be sharing a few quick dinners with you. I know we all have days and weeks were we either need to get dinner on the table quickly to get to our next activity, or we are trying to cook dinner while doing 800 other tasks. Am I right?!
Not only are these two meals all made in one skillet to cut down on the dishes, but you can make both dinners using just one package of shredded rotisserie chicken found at Costco. On my really busy weeks, I like to make both dinners in one night using the entire package of chicken and then save one dinner for another night in the week.
Now, I have toddlers and toddlers LOVE pasta. I imagine teens love a good pasta dinner as well. So these two dinners should be a real hit for you. Keep all of these ingredients on hand in the pantry and freezer and you will always have a “go-to” meal.
One Skillet Chicken Alfredo with Peas

2 Tbsp olive oil
2 cups cooked, shredded chicken
1 tsp minced garlic (2 cloves)
3 cups chicken broth
1 cup heavy cream
1/2 lb penne pasta, uncooked
2 cups frozen peas
2 cups shredded Parmesan cheese
Flat leaf parsley for garnish
1. In a large skillet, saute minced garlic in olive oil on medium heat for 1 minute
2. Add in chicken, broth, cream, and uncooked pasta to pan and stir. Bring to a boil and reduce heat to simmer.
3. Cover pan and cook 15 minutes. Add peas and cover pan to cook 5 more minutes until pasta is tender.
4. Remove from heat and stir in shredded cheese until melted. Garnish with parsley and serve.

One Skillet Chicken Mozzarella Pasta

1 pound Rigatoni pasta, uncooked
2 Tbsp olive oil
2 cups cooked, shredded chicken
1 cup frozen, diced onion
1 tsp minced garlic (2 cloves)
1 jar (25 oz) Marinara sauce
2 cans chicken broth
1 cup water
1/2 tsp crushed red pepper flakes (omit if you are VERY sensitive to spice)
1 Tbsp dried parsley flakes
8 oz fresh mozzarella, cut in to cubes
8 fresh basil leaves, chopped
1. In a large skillet saute garlic and onion in olive oil for 2 minutes on medium heat.
2. Add in uncooked pasta, chicken, marinara sauce, broth, water, crushed red pepper, and parsley. Stir to combine. Bring to a boil, cover pan and reduce heat to a simmer. Cook for 20 minutes.
3. Add in cubes on mozzarella and cover with lid for 5 more minutes to let the cheese get soft.
4. Remove from heat and garnish with basil leaves and serve.
